One Plate of Hainanese Chicken and 20 Years of Memories Came Rushing Back

By Butz Bartolome ·

Lyndah and I have a shorthand for certain moments. A look. A smile. No words.

That’s exactly what happened when we sat down at Tiong Bahru Singapore Flavours.

We spent years living in Singapore — years that shaped who we are, how we think, and what we believe a business built with genuine care looks like. The hawker centres were our classroom as much as any conference room. Every weekend, without fail, we found ourselves at a plastic table, tray in hand, ordering the same thing: Hainanese Chicken Rice.

It sounds simple. It was anything but.

The Hawker Centre Was Our Classroom.

The best hawker stalls treated that dish like a craft. Poached low and slow to keep every fiber of the chicken tender. Rice cooked in the same stock — each grain separate, fragrant, subtly rich. Ginger sauce pounded fresh. Chili bright and clean. A small bowl of clear broth to sip between bites. Every element in conversation with the others.

We ate it so many times in Singapore that it stopped feeling like a meal. It became a ritual. A moment of stillness in the middle of busy, building years.

When we came home to the Philippines, we carried those years with us — the discipline, the standard, the deep belief that quality is never an accident. But we quietly missed that plate.

Recently, Lyndah and I visited Tiong Bahru Singapore Flavours in Manila. We looked at each other after the first bite. Same look. Same smile. No words needed.

They got it right. The tenderness, the fragrance, the balance — all of it intact across thousands of kilometers and 16 branches in a country far from where that recipe was born. That is not easy. That is a commitment made and honored every single day.

It reminded me of something I believe deeply: the businesses that endure are not the ones that grow the fastest. They are the ones that remember, even at their sixteenth location, what made the first one worth coming back to.

Lyndah and I are grateful for years that taught us that lesson — and for a plate of Hainanese Chicken Rice that brought it all flooding back.
